Cooking vegetables should never get boring, nor should eating them ever feel like a chore. After all, there are so many variations on preparation. Take for example, this cashew cauliflower and curry mash.
My friend Lori and I went out for Thai food a couple of weeks ago at Pakarang in Providence which inspired to use the curry in my spice cabinet. I created this cashew and curry cauliflower mash, another quick and easy way to add in vegetables.
1 small head of cauliflower
1 tablespoon cashew butter
1 tablespoon of ghee (optional)
1/2 teaspoon of curry
pinch of cayenne pepper
sea salt to taste
Steam cauliflower florets for about 10 minutes until tender, but not mushy. Add to food processor along with remaining ingredients. Pulse until ingredients are combined and you have a smooth, creamy texture. Add ghee on top. This recipe makes a pretty large amount.
The cashew butter made it really creamy and the ghee, of course, added to it’s rich taste.
