Sharing two pea recipes today just in time for the start of spring!
Loved this Goat Cheese and Pea tart with a super nice almond crust from Gourmande in the Kitchen. I’m thinking that there are endless variations on this recipe using this crust as the base.
I also created a little recipe of my own using peas.
For this salad, I boiled English peas for about 2 minutes, drained, and then added the following avocado mixture on top:
In a food processor, I combined 1 avocado, 1 teaspoon of white miso, 1 teaspoon of avocado oil, and juice from 1 lemon. I pulsed these ingredients so that the avocado was still in chunks, not totally pureed. Then added some microgreens from Farming Turtles.
