Watermelon, Feta, and Arugula Salad

It’s so true, food really does bring people together in a unique way.  The summer season also brings us together as we make more of an effort to go out and spend time with friends.

This past week, Kyle and I enjoyed some al fresco dining with our new neighbors from England.  We shared stories, laughs and good food with  Lianne, Angus, and their two year old son, Lucas.

I decided to make something simple for our first date with our neighbors.

I prepared a watermelon salad from Ina Garten which I decided on after my friend Darci prepared a similar salad at one of our recent boot camp girl get togethers. Grilled swordfish that Kyle caught last week was also on the menu along with a Barbara Lynch recipe for wild rice salad.  Light and easy, it’s one of the things I love most about summer.

I was very excited to hear about their lives in England and hear that they enjoyed the meal we prepared too!  Kyle and I are looking forward to spending time with them  over more dinners as we listen to their new adventures living in the U.S.  They love being in Newport, the beaches and sunshine have been a nice treat.  They’re also looking forward to attending the 4th of July parade in Bristol.  The crazy thing is, we’ve never even been!  Angus stopped over yesterday to borrow a ladder so that he could install an America Flag on his porch alongside a British flag.  We advised that he hold off on putting up the British until after the 4th and he agreed 🙂
