Better Breakfasts

A breakfast bowl variation with cashews and buckwheat goats.

I feel like I’ve been on a small mission over the past few years to offer better breakfast options.  Yet, when I go for a Monday morning walk, I still notice sugary cereal boxes in people’s recycling bins 😉  I sort of feel like a spy but I can’t help but notice. Clearly, there’s still more work to be done.  Boxed cereals are nutrient-lacking, highly processed and have no place at your breakfast table if you’re interested in sustained energy and satiation. There are so many other options out there.

Oatmeal is great but often too hot to eat in the summer.  Try a raw breakfast bowl such as the one below and experiment with different variations to customize it and make it your own.

Power Breakfast

1 apple, chopped (I used granny smith)

2 tsp cinnamon

1-2 TBSP cashew or almond butter

1 TBSP flaxseed meal

2 TBSP coconut chips or flakes

1 medjool date, chopped

2 tsp coconut oil or ghee

¼ cup fresh blueberries or another seasonal fruit (optional)

Combine all ingredients in a bowl.

Feel free to add other nuts, spices, or fruit to your liking.  I think I’ll try pear, peach, pumpkin seed, and tahini tomorrow.
