It’s no secret; I love butter, but, I love ghee even more.
In Ayurveda, ghee is considered to be nourishing for the body and supports healthy ojas, or immunity. Ghee is also known to promote flexibility, healthy joints, and connective tissue. It also has the special action of nourishing the mind and increasing the digestive fire without creating excess heat in the body. Aside from the health benefits of ghee, it’s also appropriate for those who cannot tolerate dairy (it’s dairy free!) and it’s able to withstand high cooking temperatures without going rancid.
